In July we jetted off to Belize on our first hosted trip for four unforgettable days of cocktail sipping and beach bumming with 10 of our besties. We basked in the Belizean sun at the jaw-dropping Mahogany Bay Resort & Beach Club, nestled in a lush, tropical hideaway on the idyllic island of Ambergris Caye.
Ambergris Caye is more than just an island; it's a living masterpiece adorned with mangrove swamps, lagoons, and pristine beaches stretching to the horizon and beyond. The island's coastline finds protection in the form of an awe-inspiring 190-mile-long Barrier Reef, the planet's second-largest living coral reef. For diving and snorkel enthusiasts, this underwater wonderland is a dream come true, with abundant marine life and ethereal landscapes awaiting exploration.
San Pedro, the main town on the island, was christened after Saint Peter, the patron saint of fishing – a fitting homage to its humble origins as a fishing village. If you're a fan of seafood, you're in for a treat! With a lobster season spanning nine glorious months, visiting during this time promises a tantalizing culinary experience.

As we settled into our chic accommodations, it was easy to see why Mahogany Bay Resort stood out. The attention to detail was impeccable, and each villa exuded an air of elegance that resonated with the tropical surroundings. Our mornings were greeted by the gentle rustling of palm trees, and our evenings were serenaded by the distant lull of the waves.
It's important to note that while Mahogany Bay Resort is a true oasis, it's situated a bit farther away from the bustling heart of San Pedro compared to other accommodations. And you know what? That's part of its charm. This seclusion allows you to truly disconnect from the world and immerse yourself in the island's beauty.

Centering your girls’ trip around an exclusive private beach club, the resort grants access to kayaks and stand-up paddleboards for aquatic exploration, while a saltwater swimming pool offers refreshing dips. Authentic Belizean cuisine graces your palate through local food stands and an on-site restaurant, catering to every taste. The Beach Club
A true jewel in the crown of Mahogany Bay Resort & Beach Club is its private beach club –undoubtedly our favorite part of our stay. To access this idyllic beach club, the resort provides a boat that shuttles guests every hour, beginning at 10 am, ensuring effortless transfers from the resort to the club.
The presence of attentive beach servers and skilled bartenders ensures that your every whim is catered to. And forget about carrying cash or cards – your purchases are conveniently charged to your room. Whether you're craving a refreshing cocktail or a delectable snack, the beach club has you covered.
For an experience that's nothing short of lavish, the overwater cabanas beckon – available for half or full-day rentals. To secure your own personal slice of serenity, a visit to the office near the main lobby is all it takes to reserve one of these luxurious havens.
The Service
Coming back for my second stay at Mahogany Bay Resort & Beach Club, I've got to say the service here remains top-notch. From the friendly faces at the front desk to the helpful bellmen and the dining staff who always make you feel welcome – the service is genuinely great. And the best part? They're not just friendly, they're quick too!
The Food
From fluffy pancakes that stole our hearts at The Verandah (their main restaurant) to Stirred (the lobby bar) where we had the best craft cocktails – especially during happy hour, this place has taste covered. Rum + Bean is the go-to for fantastic coffee, and guess what? The coffee itself is free, though if you want some extra jazz, there's a small cost.
When the night sets in, Dirty Martini shines with tapas and cocktails that hit the spot – their espresso martinis are pure perfection! For quick bites, Top Dog Hot Dogs in the Village is snack central, and don't even get us started on the Beach Club! Fried chicken wings and grilled kebabs were our beachside cravings, and the hibiscus mojito and San Pedran ice tea? Totally nailed it. Whether you're digging into a beach feast or relishing cocktails under the stars, Mahogany Bay Resort's culinary delights will have your taste buds begging for more.
What to Do
Secret Beach
Located in San Pedro, an oasis of beach bars dot the coastline, inviting you to indulge in the art of beach and bar hopping. What sets these bars apart is the novelty of their ocean-front picnic tables, where servers wade through the water to deliver your orders – a truly immersive and fun experience. If you're seeking a sun-drenched day of pure bliss, a visit to Secret Beach is an absolute must. Though it's a 45-minute to 1-hour golf cart ride from the heart of town, the journey is half the adventure. Break up the drive with a pit stop at Pur or Truck Stop for lunch or a stroll through town, adding a touch of local flavor to your excursion.
Our personal favorite beach bars during this escapade were Pirates and Blue Bayou. Pirates stole our hearts with their mouthwatering ceviche and honey & lime margaritas. Blue Bayou, however, emerged as the crowned jewel with its tantalizing ceviche, fresh fish delights, and irresistible mango margaritas.
Golf Cart Rental
As you traverse Ambergris Caye, you'll notice that the preferred mode of transport isn't the conventional car, but rather the charming golf cart – a testament to the island's laid-back spirit. I've had the pleasure of using VIP Golf Cart Rental all three times I vacationed in San Pedro, a reliable vendor that provides both convenience and top-notch service. William, the owner, ensures a seamless experience, even picking you up from the airport with your chosen rental. On this trip, I rented three golf carts to accommodate our group of ten, and when one experienced a glitch, William's dedication shone through as he met me at midnight to swap it out – talk about outstanding service!
Massages
While Mahogany Bay Resort offers massages within its lavish confines, there's a local charm to seeking out massages from small businesses that add a touch of authenticity to your experience. My personal recommendation is Ocean Essence Day Spa, where the hospitable service and skilled hands of the masseuses create a blissful escape. I urge you to explore their signature four-handed massage – a harmonious choreography of two therapists working in tandem. You can’t beat getting a massage near the ocean!
Diving & Snorkeling
If you're eager to discover the hidden treasures beneath the waves, look no further than Belize Pro Dive Center. With a legacy of excellence, this dive shop has earned its reputation as the go-to destination for those seeking diving, snorkeling, and fishing adventures that are nothing short of remarkable. My personal journey with Belize Pro Dive Center spans multiple trips, where I've indulged in scuba diving tours that are a true testament to their dedication to exceptional service. It's no wonder that I not only continue to choose them for my own explorations but also confidently arrange tours for my clients, knowing they'll experience the best that Belize's waters have to offer.
On this trip, we embarked on the Snorkeling Hol Chan and Shark Ray Alley tour, a mesmerizing experience that brought us face-to-face with the incredible marine life of these renowned locations. But what makes Belize Pro Dive Center truly exceptional is not just their tours, but their commitment to ensuring that every traveler's desires are fulfilled. In instances where they couldn't accommodate my preferred tour, they went the extra mile to recommend other reputable dive shops that I've had the pleasure of experiencing. Ramon's, a choice for my Blue Hole Dive Trip, and Searious Adventures, a fantastic pick for exploring Caye Caulker and snorkeling in Hol Chan Marine Reserve, are both worth considering for your aquatic escapades.

Truck Stop: When it comes to laid-back vibes and tasty pizza pies, Truck Stop is a name that resonates with locals and visitors alike. This eclectic food truck garden and bar is a hub of culinary creativity where you can relish gourmet slices in an inviting atmosphere.
Estel's Dine By the Sea: For breakfast, don't miss the flapjack, a local favorite. Whether you're sipping on a morning coffee or indulging in a hearty breakfast spread, Estel's offers a charming setting by the sea, making it the ideal spot to start your day.
The Baker: The Baker is ideal for pastry enthusiasts and smoothie aficionados. Their offerings, ranging from sweet croissants with Nutella to savory sausage rolls, are a delight for your taste buds. Frenchy's: With a menu featuring steak, seafood, and more, this establishment lives up to its reputation as one of the best on the island. The cocktails are an art form, and the back patio provides a relaxed vibe that's perfect for savoring each bite. I Highly recommend making a reservation ahead of time, no matter the size of your group.
Hidden Treasure: True to its name, Hidden Treasure offers a trove of seafood treasures that will leave your taste buds rejoicing. The stuffed grouper is a personal favorite, while the BBQ Bacon Wrap Shrimps & Fish earned their place as a group favorite. With a menu that celebrates the ocean's bounty, this restaurant is a paradise for seafood lovers.
Pupuseria Salvadoreno: For a taste of El Salvador, Pupuseria Salvadoreno is an absolute must. The pupusas, a traditional dish, are an irresistible treat – be sure to try the mixed variety for a burst of flavors. Beyond pupusas, the lobster burrito and beef burrito are personal favorites that reflect the culinary diversity of the island.
Caramba Restaurant: To truly experience the essence of this establishment, forgo ordering off the menu and let the fresh seafood guide your choices. The staff's recommendations on preparation are a testament to their expertise and ensure an unforgettable dining experience. You won’t regret it!
Elvi's Kitchen: Great lunch spot to indulge in Caribbean cuisine. Group’s favorites: tacos, seafood curry, conch fritters, Elvi’s chicken sandwich, and specialty guac.
Pro Tip: It’s best to make reservations for dinner for big groups to ensure they can accommodate.

Belize, you've been a dream come true, giving us a taste of adventure, relaxation, and the kind of bonding only a girlcation can create. Whether we were snorkeling through vibrant reefs or exploring the hidden gems of local eateries, every second was pure magic.
